I have always been drawn to artistic endeavor. Realizing that food could be art, stimulating all senses, triggering memory and nourishing the body, it was only natural that I chose culinary art as my path. My inventive passion in the kitchen comes from creating culinary masterpieces that spotlight fresh ingredients, unique flavor profiles and creative food styling using traditional Asian/European methods and various of innovation culinary technologies. Inspired by his father, a Chef, and grandparents who own a farm in Hong Kong, Chef Andy Chung learned to appreciate food from an early age. He began his culinary career during school holidays working at his uncle’s restaurant in Surrey before moving to London where he earned his Bachelor of Digital Media Design from London College of Communications in 2005.
Eager to expand his knowledge and passion for culinary art, he trained at Satsuma, a modern Japanese restaurant situated in the heart of Soho where his culinary talent was soon recognized. He then moved on to work at some of London’s landmark restaurants including Nobu, Taman Gang, Royal China and Yi-Ban earning him the opportunity to work with two of London’s Michelin Star Chefs, Hiroki Takemura and Jimmi Nakamura. Their guidance and influences were critical to Andy’s skills and professional development. It was there that he learnt the foundation, technique and knowledge that are the basis of the cuisine for which he is well known for: the re-interpretation and modernization of traditional Pan-Asian dishes into his very own Progressive Asian Cuisine.
